Zesty Pub Cheese

Makes: 2 cups/480 g


1½ cups/180 g Tillamook® cheddar cheese, sharp, grated
½ cup/110 g mayonnaise
1 tsp adobo from canned chipotles in adobo
½ tsp Worcestershire sauce
½ tsp brine from pickled jalapeños
2 Tbsp pickled jalapeños, minced
2 Tbsp pimentos, drained and minced
3 tsp scallions, sliced thin
1 tsp lime juice, fresh


  • Blend cheese, mayonnaise, adobo, Worcestershire sauce and pickled jalapeño brine in blender or food processor at low speed for 5 minutes.
  • Add remaining ingredients and blend at medium speed for 1 minute.

Tip: When blending, stop and scrape the sides periodically to get all the good stuff mixed in.
