Pulled Pork Quesadilla

Quesadilla

PULLED PORK QUESADILLA

Makes: 2 quesadillas

Ingredients:

4 corn tortillas, about 6 in/150 mm in diameter
2 Tbsp Mango Chili Mustard (see recipe below)
6 oz/170 g pulled pork, shredded
½ cup/65 g Jack cheese, shredded
2 oz/55 g Laura Chenel’s Chèvre goat cheese
2 Tbsp clarified butter, melted
2 tsp Sweet Soy Glaze (see recipe below)
¼ cup/65 g Mango Salsa (see recipe below)
2 cilantro sprigs
2 lime wedges

Instructions:

  • Place clarified butter in large sauté pan.
  • Spread two tortillas evenly with Mango Chili Mustard, pork and cheeses. Cook for 2 minutes until golden brown on bottom.
  • Stack the remaining tortillas on top and flip to cook other sides until golden brown.
  • Cut each quesadilla into 6 pieces. Drizzle with Sweet Soy Glaze and garnish with Mango Salsa, lime and cilantro.
  • Blend ingredients until smooth.
  • Fold all ingredients together.
  • Combine all ingredients except sesame oil in saucepan and cook over medium-low heat for 25 minutes.
  • Add sesame oil.
  • Strain through fine strainer. Glaze should be a thick, viscous consistency.

MANGO CHILI MUSTARD

Makes: 1 cup/230 g

Ingredients:

½ cup/125 g mango chutney
½ cup/125 g Dijon mustard
2 Tbsp canned chipotles in adobo, puréed

Instructions:

  • Blend ingredients until smooth.

MANGO SALSA

Makes: About 2 cups/455 ml

Ingredients:

1½ cup/250 g mango, diced ¼ in/6 mm
½ Tbsp jalapeño, deveined, deseeded, minced
2 Tbsp green onions, bias cut ¼ in/6 mm
3 Tbsp red bell pepper, diced ¼ in/6 mm
1 Tbsp lime juice
1 Tbsp extra virgin olive oil
½ tsp kosher salt
¼ tsp black pepper, coarse ground

Instructions:

  • Fold all ingredients together.

SWEET SOY GLAZE

Makes: 1 cup/240 ml

Ingredients:

1 cup/240 ml soy sauce
¼ tsp jalapeño, deveined, deseeded, minced
1½ cups/300 g granulated sugar
1 Tbsp sesame oil

Instructions:

  • Combine all ingredients except sesame oil in saucepan and cook over medium-low heat for 25 minutes.
  • Add sesame oil.
  • Strain through fine strainer. Glaze should be a thick, viscous consistency.
