Bungalow Salad

Bingalow Salad

This enticing salad mixes tropical and Mediterranean flavors for a winning combination. At the restaurants, we serve it with three kinds of nuts, although you can use one or two of your favorites.

MAKES: 4 servings | Cooking Time: 30 Minutes

 

SALAD INGREDIENTS:

  • 8 oz lettuce mix
  • 4 tsp almonds, toasted
  • 4 tsp dried blueberries
  • 4 tsp macadamia nuts, toasted
  • 2 oz feta crumbles
  • 4 oz tomatoes, 1/2" dice
  • 4 tsp pumpkin seeds
  • House salt and pepper (see recipe below)
  • Meyer Lemon Vinaigrette (see recipe below)

    VINAIGRETTE INGREDIENTS:

  • 1/2 cup (120 ml) pure maple syrup, preferably Grade A Dark
  • 2 Tbsp fresh Meyer lemon juice
  • 2 Tbsp mashed Roasted Garlic
  • 2 tsp Dijon mustard
  • 1/2 tsp dried basil
  • Kosher salt and freshly ground black pepper
  • 3/4 cup (180 ml) extra-virgin olive oil
  • 1 Tbsp white truffle oil

 

HOUSE SALT & PEPPER:

  • 3 Tbsp kosher salt
  • 1 Tbsp coarse grind black pepper
  • 1/2 tsp white pepper

 

STEP 1 - PREPARE HOUSE SALT & PEPPER

  • Add all ingredients together and mix well. (place bowl to the side)

STEP 2 - PREPARE VINAIGRETTE

  • Process the maple syrup, sherry vinegar, lemon juice, roasted garlic, mustard, basil, 1/2 tsp salt and 1/4 tsp pepper in blender. With the blender running, gradually pour in the olive oil through the feed tube (or hold in the lid). Add the truffle oil and pulse to combine. Season to taste with salt and pepper.

TIP: The vinaigrette can be covered and refrigerated for up to 5 days.

STEP 3 - TOASTING NUTS

  • Preheat the oven to 350F (180c). Spread the nuts on a small baking sheet or toaster oven tray and bake, stirring occasionally, until the nuts are lightly toasted, 8-11 minutes. Nuts with high oil content, such as macadamias, will take the least amount of time.
  • (Some cooks use a skillet, this is not nearly as reliable as baking, and the nuts can burn in spots.)

TIP: Toasting nuts in the oven enhances their flavor.

TIP: For a small amount of nuts, less than 1/2 cup (55 g), a toaster oven may be more efficient than a standard oven.

STEP 4 - SERVING INSTRUCTIONS

  • In a mixing bowl, add all the ingredients and mix well.
  • Divide the salad equally among four plates.
